I’m so excited for this classic carrot cake recipe! You know I have a new carrot cake version every year, and this one is a new rendition you will love so much! It’s loaded with dried apricots and roasted pecans. It also has a bit of cream cheese in the cake batter for more tanginess. The creamy and easy cream cheese frosting is made with brown butter for extra nuttiness. This cake is made by hand, and it’s so fun to make. I’m sure it will be one of your new favorites this season!
