The Fluffiest Cinnamon Peanut Butter Pancakes

I’m so happy I got to make these soft and fluffy cinnamon pancakes that have a touch of cinnamon. They totally melt in your mouth. I’ll have pancakes any day, but I even love them more during hectic times like Christmas because they are not only super easy to make but they will warm your morning and make you start the day right.

Another thing I love during hectic times is convenience. Who doesn’t? A few years back I remember myself hopping through lots of supermarkets and grocery shops to find good quality foods; wholesome, organic as much as possible and free of artificial anything. During those days, buying groceries on the Internet was not yet a trend. It would take me about 2 days to find everything I needed for my daughter and us for the next week or week and a half. And then again, repeat the whole shopping tour all over again!!! Fast forward to present time and everything has got much better now, even finding my kind of groceries in very unexpected places.

So when Wal-Mart made me an approach to develop a recipe using some of their products, Members Mark, I was a bit hesitant. How will those products fit into my recipes and my cooking style? It was a really nice surprise to find on the aisles of Wal-Mart a lot of the same products and brands I usually use. No kidding! And lots of their Members Mark products are clean and natural with a list of ingredients I have no problem bringing to my home.

And since I’ve been wanting to share with you this cinnamon pancakes recipe, with a secret ingredient that helps making them extra soft and fluffy (psst, it’s confectioner’s sugar!), I though it was time to pick the ingredients and take a pretty pic of them so you can see what I’m taking about. I didn’t have to sacrifice on the quality of any of the ingredients because, as I mentioned, most were the same clean brands I regularly use. And then I used the Members Mark Natural Peanut Butter, the Baked Granola and the ground cinnamon to finish up this delicious and sweet breakfast. Trust me, these cinnamon pancakes are so soft and will melt warmly in your mouth with all the goodness of the peanut butter and the crunchiness of the granola!!

You can use a gluten free flour blend for a gluten-free version as well!

The Fluffiest Cinnamon Peanut Butter Pancake

Ingredients

◯ Organic coconut milk or regular full fat milk– 1 ½ cup
◯ White vinegar - 2 TBSP
◯ Unbleached flour – 1 ½ cup
◯ Baking powder – 2 Tsp
◯ Ground cinnamon – 1 ½ Tsp
◯ Fine sea salt – ½ Tsp
◯ Grass-fed butter – 4 TBSP
◯ Raw sugar – 1 TBSP
◯ Confectioner’s sugar - 1 TBSP
◯ Cage-free egg - 1
◯ Vanilla extract – 1 Tsp
◯ Natural peanut butter, jelly, baked granola and fresh fruits to serve.

Steps

To make the pancakes:

In a bowl or a large measuring cup mix the coconut milk and the vinegar.

In a large bowl combine the flour, baking powder, cinnamon and salt with a hand whisk.

In a medium glass or ceramic bowl melt the butter in the microwave in 10 second intervals. Immediately add both of the sugars and using a hand whisk mix to dissolve the sugar into the butter. Add the egg and vanilla and mix once more. Add the coconut milk and water mixture and mix until everything is well incorporated. Remember that small lumps of flour are ok.

Heat a griddle in medium heat and melt some butter on it, just to cover the surface. Don't let the butter turn brown. Using a spatula spread the melted butter. After a couple of minutes of heating, pour about ¼ cup of the batter on the hot griddle. Repeat with more batter until griddle is full and leaving about ½” between pancakes. Cook for about 2 to 3 minutes, until the edges look cooked and the top of the pancake has tiny holes. Carefully turn the pancakes over and cook for an extra minute. Retire from heat and place on a cooling rack. Spread some butter on top of pancakes if desired. Grease again the skillet, decreasing the heat a bit to prevent butter or pancakes from burning. Cook the rest of the batter.

Serve them with natural peanut butter, your favorite jelly, warm pure maple syrup, fruits or any of your favorite pancakes toppings!
