It’s finally here! I'm talking about Fall! Instead of waiting for pumpkins to turn into carriages, let’s turn them into something delicious with all the spices, caramel and nuts we love to mix them up with. This incredibly soft, moist and flavorful Pumpkin Spice Coffee Cake is the perfect recipe to start warming up yourself with all the Fall bakes that are already living in our minds. The punch of brown sugar is the star of the show, mellowed with a beautifulblend of warm spices that will make you come back for more. The streusel on top is made with homemade pumpkin butter and perfectly toasted pecans. There’s no better buddy to your coffee than this delicious cake!

Before we jump into the recipe, let’s talk about what is a coffee cake. I know it sounds crazy, but coffee cake doesn't actually have coffee in it. It’s called coffee cake because of its dense and tender texture, the crumb bits from the streusel and the layer of brown sugar in the middle make it the ideal snacking cake to have with your cup of coffee. So please, don't think the recipe is missing something because you are not seeing coffee listed in the ingredients, even though the addition of some espresso powder wouldn't be such a bad idea!(;

Now, let's talk about making this cake! Your kitchen will smell AMAZING after you bake this. Yes, capital letters and everything! The cake itself has a very well balanced pumpkin flavor. No need to squeeze and eliminate the water from the pumpkin. That water contains lots of pumpkin flavor! The warm and nice kick comes from the brown sugar and spices in the filling and the streusel.
