Jumbo Banana Blueberry Muffins

So many of my favorite things for breakfast in one single bite! Bananas, blueberries and almonds! These Jumbo Banana Blueberry Muffins have almond in the batter and are made with some almond flour as well. They’re so tender and crumbly! The top is crunchy thanks to a nice layer of Demerara sugar over them! You only need one bowl, a whisk and a wooden spoon, that’s it! NO mixer or special equipment required. And the cool thing with these is that you can make the batter the night before and just bake them the next morning.

When I wake up with that rush for making muffins, I know it’s going to be a nice, warm and slowly paced morning. I love the idea of taking a glance at different corners of my kitchen and being inspired to bake a fresh batch of muffins with what I already have. This morning I happened…

Blueberry Jam Heart Shaped Doughnuts

You know it’s not Valentine’s in here if there aren’t Heart Shaped Doughnuts in my kitchen!! This year I sticked to my bready dough and filled them with a sweet elderflower blueberry jam. I also used the Tangzhong method for the dough to make it soft and fresh for days, not only the day they were fried. I’m also telling you how you can make these overnight and a few cool tips on how to reheat doughnuts to make them taste even better than when fried!

Maybe it’s because everyone loves these doughnuts so much, from you my readers to my neighbors in the first floor, that I couldn’t help to make these for Valentine’s. There’s something magical about them and ironically, I think it is the amount of work behind them, haha!! After you finally sit down with a doughnut in one hand, a cup…

Raspberry Jelly Heart-Shaped Doughnuts

Homemade Raspberry Jelly Heart Shaped Doughnuts for Valentine’s breakfast!! Do I need to say more? I still will say these are yeasted and FRIED, exactly how doughnuts are intended to be made!! They’re super soft and tender but still with a chewy bite thanks to both all-purpose and bread flour. They will also be fresh for days thanks to the Tangzhong method and I’ll explain what is exactly that here in this post. These are a perfect and fun Valentine’s breakfast to be enjoyed any day of the year!

Given Valentine’s is near, I wanted to bring together my love for two flours that usually don’t get involved with each other in the baking world; all-purpose and bread. Bread flour has more protein than all-purpose, giving the dough you are making a more structured gluten formation, which helps in giving the final product that chewy bite we…

Jumbo Blueberry Muffins with Cheesecake Streusel

Not only these super soft and tender jumbo blueberry muffins are full of flavor, they are topped with a streusel inspired by one of the most popular dessert here at the blog, Blueberry Cheesecake. I used softened cream cheese and graham crackers to make the streusel that will top these bakery style blueberry muffins. You only need two bowls and a spoon to mix these up, that way you can easily have them any day you want!

I know the mere idea of having a bite of these early in the morning will make your day better instantly. I’m sure your mood…

Honey Lavender Scones

These honey lavender scones are ideal any cozy day. Each bite is such a sweet and delicate treat. You will feel like hitting the pause button. As the calming sensation you feel after a nice hot cup of lavender tea, these honey lavender scones will bring you so much bliss. And the best thing with these scones is that you can make most of the steps the night before and leave things in the fridge. They will be super chilled and that’s exactly what a good scone’s dough needs.

I have never been a super fan of lavender in food. But a few weeks ago I was watching “Matilda” because I know my daughter loves it. Maybe because I was reminiscing about how much my daughter loves movies, I got really immersed on that one. And suddenly the characters of “Lavender” and “Miss Honey” started to resonate…
